Lion's Mane Mushroom Steak

Meaty, golden-crusted, and absolutely stunning — lion's mane mushrooms sear up like a steak and make the perfect plant-based centerpiece. A showstopper that takes just 15 minutes.

Ingredients

  • 2 large Pistol River Dried Lion's Mane Mushrooms, rehydrated
  • 3 tbsp butter
  • 3 cloves garlic, smashed
  • Fresh rosemary sprigs
  • 2 tbsp olive oil
  • Flaky sea salt & cracked black pepper
  • Lemon wedge to serve

Instructions

  1. Rehydrate lion's mane mushrooms in warm water for 30 minutes. Drain and gently press dry with paper towels.
  2. Slice into thick 1-inch steaks. Season generously with salt and pepper on both sides.
  3. Heat olive oil in a cast iron skillet over high heat until smoking.
  4. Add mushroom steaks and sear without moving for 3–4 minutes until deep golden brown. Flip.
  5. Add butter, garlic, and rosemary to the pan. Baste the mushrooms with the melted butter for 2–3 minutes.
  6. Remove from pan. Rest 1 minute.
  7. Serve on a slate board with a squeeze of lemon and flaky salt.
