Cajun Mushroom Shrimp

Bold, smoky, and packed with flavor — this one-skillet dish puts your Pistol River Mushroom Cajun Seasoning to work. Perfect over rice or crusty bread.

Ingredients

  • 1 oz Pistol River Dried Mushrooms (any variety)
  • 1½ tsp Pistol River Mushroom Cajun Seasoning
  • 1 lb large shrimp, peeled and deveined
  • 3 tbsp butter
  • 4 cloves garlic, minced
  • 1 bell pepper, sliced
  • ½ cup heavy cream
  • Green onions and lemon wedges to serve
  • Salt to taste
  • Olive oil

Instructions

  1. Rehydrate mushrooms in warm water for 20 minutes. Drain and slice.
  2. Toss shrimp with 1 tsp Mushroom Cajun Seasoning.
  3. Heat oil in a cast iron skillet over high heat. Sear shrimp 1–2 minutes per side until pink. Remove and set aside.
  4. In the same skillet, melt butter. Add garlic, bell pepper, and mushrooms. Cook 3–4 minutes.
  5. Add remaining seasoning and heavy cream. Simmer 2 minutes until slightly thickened.
  6. Return shrimp to the pan and toss to coat.
  7. Serve over rice, topped with green onions and a squeeze of lemon.
