Ingredients
- 1 oz Pistol River Dried Mushrooms (any variety)
- 1½ tsp Pistol River Mushroom Cajun Seasoning
- 1 lb large shrimp, peeled and deveined
- 3 tbsp butter
- 4 cloves garlic, minced
- 1 bell pepper, sliced
- ½ cup heavy cream
- Green onions and lemon wedges to serve
- Salt to taste
- Olive oil
Instructions
- Rehydrate mushrooms in warm water for 20 minutes. Drain and slice.
- Toss shrimp with 1 tsp Mushroom Cajun Seasoning.
- Heat oil in a cast iron skillet over high heat. Sear shrimp 1–2 minutes per side until pink. Remove and set aside.
- In the same skillet, melt butter. Add garlic, bell pepper, and mushrooms. Cook 3–4 minutes.
- Add remaining seasoning and heavy cream. Simmer 2 minutes until slightly thickened.
- Return shrimp to the pan and toss to coat.
- Serve over rice, topped with green onions and a squeeze of lemon.
