SHIITAKE MUSHROOM SALSA
Wonderful on chicken, beef and pork!
1 lb Shiitake mushrooms,
1/4 cup olive oil
5 tbls balsamic vinegar
garlic cloves, slivered
medium shallots, thinly sliced
1 tsp rosemary
salt & pepper
2 tbls parsley, chopped
2 tbls olive oil, additional
1 tbls balsamic vinegar, additional
salt & pepper, if needed.
Quarter mushrooms and toss with olive oil thru
salt & pepper. Place on a sheet pan in a preheated
375F oven and roast for about 10 minutes or until
mushrooms start to exude their juices. Remove
from oven and let cool saving the juice.
Toss mushrooms with parsley.
Add additional balsamic vinegar, olive oil and
salt & pepper.
Serve over chicken, pork or beef.
